Best Braai Buds Pork Belly & Rosemary Potatoes

Pork Belly

1.5kg WOODY’s Pork Belly 

3 Sprigs of fresh Rosemary  

Salt & Pepper 

Handful of fresh Thyme 

0.5 cup White wine vinegar 

Olive oil

Score Pork Belly skin 

Skin side up, broil pork belly in water and white wine vinegar on high heat for approximately 30 minutes 

Rub skin with Cracked salt, pepper, rosemary, olive oil and thyme. 

With the skin side down, put it on the grill  for up to an hour.  

In the last 15 minutes, add more salt and olive oil for desired crisp

Rosemary Butter Potatoes

500gr Baby potatoes, halved 

4 Tbs Butter 

3 Sprigs fresh Rosemary 

Salt

Par boil potatoes and remove from heat 

While hot, toss in butter, cracked salt and fresh rosemary 

Roast in Ketla till golden

Honey Carrots

Carrots 

2 tsp Honey 

2 tsp Whole grain mustard  

Salt

Blanche baby carrots in water and remove

In a hot pan, melt the butter and place the carrots, honey and whole grain mustard

Toss together until all the carrots are coated, without burning carrots

Finish off by seasoning with salt
