Kasi Coals LAMB RACK WITH KRIMMEL PAP and CHAKALAKA

Krimel pap

1 cup water  

3 cups maize meal  

1 teaspoon salt  

Once water boils and all maize and work it with fork to create small cous cous like texture allow to slowly cook through  

Chakalaka 

2 carrots grated  

Half white cabbage sliced  

Garlic  

Onion  

Curry powder  

Paprika 

Turmeric 

Chilli flakes  

Kidney beans  

1 can diced tomato  

 
Method:

Cook off onion garlic and thyme add spices and allow to cook off  

Add carrots and follow to softened then cabbage and allow to cook off 

Add tomatoes and allow to cook off then once cooked add red kidney beans and season to taste  

Lamb rack 

Clean rack and season with salt and pepper  

Grill on braai till almost done – make sure to render fat  

Finish off in kasi for 8 minutes  

Let it rest and slice and serve  

Roast vegetables

Butternut cleaned and cooked on braai plus asparagus  

Dress with an orange reduction with chopped mint
