Pat dry and season well with salt and pepper  

Add smoked paprika and stuff with:  
Chopped Squares , Sundried tomato, 2 whole eggs, Parsley, Pear.

 
Smoke for 2 hours in a medium heat in the Pit Barrel.

 
Roast potato and Brussels sprouts in duck fat season with salt and pepper and few sprigs of rosemary.  

Gravy

½ cup of flour 

1 chicken Stock  

Stick of butter  


Heat butter and add flour 

Whisk together to make a roux 

Add stock and whisk till thick 

Add milk if its too thick
