Simply Cheeky Coconut & Cardamom Cupcakes

100ml Vegetable Oil 

300ml Milk 

4 Eggs 

1 tsp Vanilla Extract 

250gr self raising flour 

280gr sugar 

1 tsp ground cardamon 

75gr Dessicated coconut  

1 tsp ginger 

Zest of 1 lemon 

Whisk oil, milk, eggs, and vanilla together 

Combine flour, sugar, spices and coconut together in a bowl.  

Add the wet ingredients to the dry 

Mix until just combined. 

Divide into 2×12 muffin pan lined with cupcake cases 

Bake at 180 for 20-25 minutes 

Can also be baked in 20x30xm roasting dish 

Yoghurt Chocolate Icing

100gr Full cream, plain yoghurt 

150gr Milk chocolate 

Combine yoghurt and chocolate into double boiler and stir until the chocolate has melted into the yoghurt 

Cool slightly then spread onto the cupcakes 

Decorate as desired
